Is there a feature / facility anywhere in Shootproof that,when a client places an order which needs a lab, will automatically send them a ‘thank you’ letter and explain that there may be a delay while I check the order?

In short, no, this isn’t an automatic email trigger. You could add this message to the order checkout screen, though. Go to Galleries > Settings > and on the Shopping Cart tab in Settings there is “Optional Message Shown at Checkout”. I hope this helps!
